Announcing the next meeting in the FRI Focus on Food Safety Series:
Communications/Meeting: Sodium Reduction and Its Effect on Food Safety, Food Quality, and Human Health
This symposium will provide a comprehensive discussion on the need to balance sodium content in foods considering its effect on pathogenic and spoilage microbes, food quality and human health.
Target audience: food industry product developers, food safety specialists, and nutritionists (particularly manufacturers of processed meats, beverages, cheese, condiments, and other prepared refrigerated, frozen, and shelf-stable foods); researchers and clinicians in human nutrition/health; graduate and undergraduate students in food science and nutrition. Briefing: Destruction of H5N1 Avian Influenza Virus in Meat and Poultry Products  (.pdf)

Outbreaks of highly pathogenic avian influenza in wild and domesticated birds have spread over a significant segment of the world area of Asia, Africa, and Europe. It is extremely important to learn how to mitigate the virus and its effect on the food chain and human health.
